Cauliflower is my favorite vegetable on the keto diet. It is very versatile and can replace carbohydrates in numerous recipes. It is packed full of nutrients. With only 25 calories in a cup, it contains high levels of vitamin C, B6 and K. Besides being high in fiber is also contains, Omega 3’s, choline, phosphorus, magnesium, biotin, manganese, niacin, vitamin B1, B2 pantothenic acid as well as protein.

It can be eaten both raw and cooked, interestingly the organic compound indole, which helps kill precancerous cells, is formed when cooked. So it is terrific for you!

I like to use it to replace meals that use mashed potatoes, mashed with swede (or rutabaga), and lots of butter. It is delicious, to eat with sausages or to top a keto Shepherds pie.

Ricing is also a popular way to eat cauliflower.  Quite simply, it is created by putting it into a food processor and processing it until it resembles rice. Broccoli is the ideal low carb vegetable with obvious health benefits. Broccoli contains high amounts of Vitamin C, Vitamin K1, Folate, Potassium, Manganese, and Iron.

KALE

Kale is a superfood on the keto diet. One cup of kale provides you with over 200% of your daily value of vitamin A and 134% of your daily vitamin C.  Lastly, 700% of your daily value for vitamin K in just one cup!

They are highly nutritious and packed full of good fats. Perfect for a keto diet, they are versatile and perfect for you.

High in fiber and low in carbs, a 200-gram avocado contains 13.5 grams of fiber and only 3.6 grams of net carbs. Avocados are also high in potassium, actually providing more than banana’s.

The oil in Avocado contains Oleic acid, which is what is also in olive oil with natural anti-inflammatory properties.

Eat it as a snack with a delicious homemade keto dressing, or as guacamole to eat as a side dish. Use it in savory dishes, but interestingly it can also be used for puddings. Blended, it makes an excellent keto chocolate mousse.

 

MUSHROOMS

Mushrooms are low in both calories and carbs and have high nutritional qualities. They are a perfect choice to eat on a keto diet. High in fiber, they have potassium, B1, B2, niacin, selenium, and are full of antioxidants. There is a vast variety of different mushrooms, all with very different flavors. They are incredibly nutritious and are renowned for their healing properties!

PEPPERS
